Red Velvet Cupcakes with Cream Cheese Frosting

Ingredients

Cupcake Ingredients


  • 1 cup granulated sugar

  • 1 teaspoon baking soda

  • 1 teaspoon cocoa powder

  • ½ teaspoon salt

  • 1 cup vegetable oil

  • 1 cup buttermilk, room temperature

  • 2 large eggs, room temperature

  • 2 tablespoons red food coloring

  • 1 teaspoon vanilla extract

  • 1 teaspoon white vinegar

Cream Cheese Frosting Ingredients

  • 8 oz cream cheese, softened

  • ½ cup unsalted butter, softened

  • 4 cups powdered sugar

  • 1 teaspoon vanilla extract



Instructions

Making the Cupcakes

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

  2. In a medium bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.

  3. In a large bowl, combine the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar. Mix until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  5. Fill each cupcake liner about 2/3 full with the batter.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Making the Cream Cheese Frosting

  1. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.

  2. Gradually add the powdered sugar, mixing until well combined.

  3. Add the vanilla extract and mix until the frosting is fluffy and smooth.

Assembling the Cupcakes

  1. Once the cupcakes are completely cooled, frost them with the cream cheese frosting using a piping bag or a spatula.

  2. Decorate as desired, and enjoy your delicious red velvet cupcakes!
