Ricotta Cookies

These soft and delicious ricotta cookies are perfect for any occasion. They are light, fluffy, and have a delightful flavor. Here’s how to make them!

Ingredients:
1/2 cup ricotta cheese
2 cup granulated sugar
2 sticks unsalted butter, softened
2 large eggs
2 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Glaze
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the ricotta cheese, eggs, and vanilla extract to the bowl and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Glaze Instructions
In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth.
Drizzle over the cooled cookies and let it set before serving.
