Triple Chocolate Mousse Cake

Ingredients
For the Chocolate Cake:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
For the Dark Chocolate Mousse:
6 oz dark chocolate (70% cocoa), chopped
1 cup heavy cream
2 large egg whites
1/4 cup granulated sugar
1/2 tsp vanilla extract
For the Milk Chocolate Mousse:
6 oz milk chocolate, chopped
1 cup heavy cream
2 large egg whites
1/4 cup granulated sugar
1/2 tsp vanilla extract
For the White Chocolate Mousse:
6 oz white chocolate, chopped
1 cup heavy cream
2 large egg whites
1/4 cup granulated sugar
1/2 tsp vanilla extract
Instructions
1. Prepare the Chocolate Cake:
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add the melted butter, eggs, vanilla extract, and buttermilk. Mix until just combined.
Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Dark Chocolate Mousse:
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Let it cool slightly.
In a separate bowl, whip the heavy cream until soft peaks form.
In another bowl, beat the egg whites until soft peaks form, then gradually add the sugar and beat until stiff peaks form.
Fold the melted chocolate into the whipped cream, then fold in the egg whites gently until no streaks remain.
3. Make the Milk Chocolate Mousse:
Repeat the same process as the dark chocolate mousse using milk chocolate instead.
4. Make the White Chocolate Mousse:
Repeat the process again using white chocolate.
5. Assemble the Cake:
Once the cake has cooled, slice it in half horizontally to create two layers.
Place the bottom layer on a serving plate and spread the dark chocolate mousse evenly on top.
Add the second layer of cake and spread the milk chocolate mousse on top of that.
Finally, add the white chocolate mousse on top, smoothing it out.
Chill the cake in the refrigerator for at least 4 hours, or overnight, to set the mousses.
6. Serve:
Before serving, you can garnish with chocolate shavings or whipped cream if desired.
